 A Little Kosher History

The term “kosher” refers to the extensive biblical dietary laws given to Jews gathered at Mt. Sinai over 3,000 years ago. These laws outline specific commandments regarding the ingredients and methods of all food preparation. The underlying message is this — what you put into your body, becomes part of you. 

Therefore, cleanliness and purity are of extreme importance – but kosher isn’t just about physical wellness. This way of life is held in reverence by Jewish communities around the world and is considered a mitzvah – a “holy precept”. Kosher food laws are used to not only enrich the physical diet but also to nourish and fuel the soul. 

From our ingredients to the equipment we use, we ensure that all elements of production remain kosher from start to finish, guaranteeing the outer and inner purity upheld for generations. 

The Certification Process

Obtaining kosher status requires a multi-step process, beginning first with our application and consultation with a Rabbinic coordinator to ensure that our entire process is kosher. This includes an audit of our entire system of operations, including inspection of our production lines, receiving and storing methods, and even our cleaning procedures and record logs. Of course, this also includes a review of all of our ingredients and product formulas! All this is necessary to create and maintain a kosher setup that adheres to the highest kosher standards. 

Our staff is fully trained in maintaining our kosher methods as thoroughly as possible at all levels. To ensure this, we receive regular mid-year visits through our Kosher field representative, guaranteeing that our products and system continue to reflect our values of purity and cleanliness.

Gluten-Free Never Tasted So Good

Gluten-free is gaining a lot of traction these days, and Chuckanut Bay Foods is along for the ride. If you are one of the millions living the gluten-free lifestyle, dessert might be a challenge sometimes. But this doesn’t mean you don’t have some very tasty options. 


A growing need for gluten-free alternatives

For some, a gluten-free diet is just a step towards a more healthy lifestyle. But for the increasing number of people suffering from Celiac Disease or gluten sensitivity, it’s a crucial element to their wellbeing. 

For those diagnosed with celiac disease – a chronic inflammatory autoimmune disorder – consuming gluten means destroying the lining of 

the small intestine. When this happens, absorbing nutrients into the bloodstream becomes next to impossible, which only leads to more serious health complications. 

Even the tiniest amount of gluten can have a huge impact on someone with celiac disease. By FDA standards, a product has to have less than 20 ppm (parts per million) to be considered gluten-free. This is the equivalent of one teaspoon in 65 gallons of liquid! While this might sound minuscule, long term exposure to even small amounts of gluten for those with celiac increases the risk of serious health problems. 


Our standards

We take that 20 ppm and cut it in half. Chuckanut Bay Foods is certified through the Gluten-Free Certification Organization (GFCO), a program of the Gluten Intolerance Group of North America. GFCO is one of the leading gluten-free certification programs in the world and also has some of the strictest standards. 

The GFCO standard is 10 ppm or less, half the level defined by the FDA. When you see our products carrying the GF logo, you can rest easy knowing it has met some of the strictest gluten-free standards around.

Our process means Gluten-free goodness every step of the way

Our gluten-free desserts require a very controlled process and special attention to be sure there is no contamination or contact with any gluten-containing ingredients. Before production can begin, our facility is fully sanitized to minimize the chance of any airborne gluten coming into contact with it. Then the real fun begins!

  1. The ingredients are gathered and measured by one employee and then double-checked by another.
  2. These ingredients are then mixed per their recipe and brought to the production line.
  3. The production line deposits the crust and batter per the specified weights for the product that is being produced.
  4. The GF products are baked in our ovens until they have reached the required temperature – this is first checked by a trained and qualified employee, then verified by another employee.



  1. The product is cooled, molds removed, and the weight recorded before going into our freezer.
  2. Our Food Safety Compliance Offer tests the finished product for gluten proteins then documents that the product has passed the gluten testing.
  3. The frozen product is then distributed to our packing employees by their packing supervisor and has a triple verification process before beginning to pack.
  4. Once the product is packed, it is palatalized onto the customer’s pallet and verified once more.



The Food Safety Compliance Officer documents each day that there is a run of gluten-free products produced. The test results are recorded and submitted to the Gluten Intolerance Group of America each quarter for review. And it doesn’t stop there…

Each year, we are also audited by the Gluten Intolerance Group of America. This process checks everything from our sanitation and manufacturing process to our testing and recall programs. They also look closely at our product and ingredient lists to ensure everything is up to the required standards. 

This highly controlled process and documentation guarantee our products continue to remain gluten-free from start to finish.

But there is more to the tale of chocolate than what you’ll read on a candy wrapper or experience with your taste buds. 

Here you’ll learn where our chocolate comes from, who makes it possible, and the steps we take to ensure only ethical practices create this exquisite ingredient. 

“Food of the gods”

While the word chocolate may bring to mind sweet truffles or candy bars, the chocolate of the past was actually a very cherished – but very bitter – beverage. According to written history, the Mayans made thick and frothy chocolate drinks for celebrations and as a way to finalize important transactions. 

Although chocolate was revered in their culture, it was available to almost everyone, no matter their status. Unlike the Aztecs, who believed cacao was a gift from their gods. In fact, the scientific name for the cacao tree, Theobroma cacao actually means “food of the gods.” Aztecs certainly enjoyed their chocolate drinks, but they also used cacao beans as currency to buy goods. To them, these beans were worth more than gold.


Why does eating chocolate feel so good?

Have you ever let a piece of chocolate slowly dissolve in your mouth and felt your heart flutter as if you just received a passionate kiss? This sensation occurs because chocolate contains very small amounts of chemical compounds called tyramine and phenylethylamine, which stimulate your brain cells to release dopamine. No wonder we love chocolate so much!

But it’s not all about the “feel good” factor. When choosing our chocolate, we’re not just looking for a great taste – we’re also looking for products you can feel good supporting. We believe we have a responsibility to our environment, our economy, and the dedicated farmers whose livelihood depends on us. 

From cacao tree to delectable treat

It’s hard to believe the core element of our chocolate truffle cheesecake and chocolate cookie crust actually began as a tropical tree. Cacao trees are native to Central and South America, but the growing area has expanded to West Africa, Southeast Asia, and pretty much any oceanic country located near the equator. These babies love that heat!

Cacao trees produce large pods that grow straight out of the trunk and can be nearly the size of a football. Within these pods lie 30-50 precious cocoa beans which are then left to naturally ferment and dry in the sun, completing the transformation from cacao bean to cocoa bean. Cocoa beans are then shipped to producers to be roasted, ground into cocoa mass, and mixed with sweetness to create the tasty treats that us chocolate lovers treasure.

But there is a vital component of this process that often gets overlooked – the hands that make it happen.

In recent years, disturbing information has surfaced around forced child labor in the production of chocolate. This has only made it more imperative that we continue to maintain our awareness of where our products come from.

Cocoa farms are typically small, family-owned, and passed down from one generation to the next. Unfortunately, poverty is still a big issue as many farmers barely have access to basic things like clean water, health services, or education. 

The worst part? Much too often, cocoa farmers are drastically underpaid. The average price you would pay for a chocolate bar at your local store is likely more than what a cocoa farmer earns in a week. This is unethical, immoral, and frankly, unacceptable. 

Doing our part

At Chuckanut Bay Foods, we only buy chocolate from companies that share our values, engage in ethical practices, and pay these farmers a respectable wage that can support them and their families. We ensure that the money we spend on chocolate goes back to the farmers so they can feed their families and put roofs on their schools. 

Another key thing we look at when choosing our chocolate supplier is their environmental practices. Water conservation, energy-saving, reduction and recycling of waste, and managing environmental risk are essential. We feel we have a role to play in the healing of our planet and want to take every opportunity we can to contribute.

Zero-Emissions Factory

Crops are rotated every five years for a sustainable tradition of field cycling, and the extraction process is held to the highest Japanese standards in a zero-emissions processing plant. The factory is in close proximity to the field to maintain freshness and to eliminate any need for roasting or pre-processing.

Each fruit is meticulously checked in a full research lab before extraction to ensure safety and quality. Any unused parts of the fruit are composted and redistributed to local farms to aid in waste reduction.
